We’ve taken quality local lamb shoulder and slow-cooked in a heady Burgundy wine packed with seasonal root vegetables. We’ve added caramelized onions to take the red wine-induced flavour to the next level. Perfectly seasoned with fresh thyme, rosemary and plenty (of course) garlic.
