Thai Green Vegetable Curry

Eggplant, zucchini, capsicum, carrots and sweet potato are simmered with Thai spices, garlic, ginger, chilli, lemongrass, coriander and coconut milk, to bring together this delicious vegetable curry. Delivered ready to heat and serve with our cardamom and cinnamon spiced brown rice.
Heating Instructions – Empty curry pouch contents into a saucepan and stir gently over a moderate heat for 7 – 15 minutes until piping hot. Open the rice pouch and microwave for 2 – 3 minutes until piping hot.
